Collecting gratitude crystals is a side quest of Zelda Skyward Sword, to start getting them you must open the secret passage at the cemetery by pushing the nearest stone from the tree, than throw a bomb there and attack the stone with the Skyward Strike. The passage will open and you will find Batreaux(he wants to become a human again) he will ask you to collect gratitude crystals, but how? to get them you must help people by solving their problems or find them single.
